Cranberry Sauce

There is nothing like a good cranberry sauce for Christmas. Put the sauce in jars with a bow, and it makes the perfect last minute gift. In the case of cranberries, you don’t need to buy fresh cranberries if you can’t find them-frozen work just as well because you are cooking them down. This recipe is flavoured with orange, port, and all of the winter spices and it couldn’t be easier. Simply add all of the ingredients into a pan, and cook down until it is a nice thick/jam consistency.

Ingredients

450g Fresh or Frozen Cranberries
Zest of 1 Orange
90g/ Juice of 1 Orange
½ tsp Ground Cinnamon
1/8 tsp ground Nutmeg
1/8 tsp ground Clove
160g Demerara Sugar
250g Port

Instructions

  1. Measure all ingredients into a medium sauce pan.
  2. Cook on medium/high heat until the sauce starts to bubble.
  3. Lower the heat to medium/low and cook down, stirring every few minutes, until it forms a jammy consistency.
